Just started playing when this hit game pass.
Loaded it today post update and now im stuck on the loading screen. Even loading a few saves back it jist sits there n just doesnt ever load.
Okay ive tried 3 manual saves & a autosave n still just locked at loading screen. Yet to try starting a new game as hesitent to give up the weeks worth of progress.

I made a new file, started the game over and was playing. Went to load back up the next day, stuck on loading screen. So I wouldn't delete your world as a fix.
Just on a whim uninstalled n loaded up via xcloud. Which point save loaded.
So ya. This deffinatly a bug on the Xbox one.
Im running it one a Xbox one X.
